Resourceful and Scrumptious Sausage Jambalaya
The resourceful and scrumptious Ruby’s Jambalaya Recipe uses two common ingredients included in the recent Ruby’s Pantry share: the corn and bean mixture and breakfast sausage or bratwurst. This recipe makes a hearty lunch or delicious dinner.
In the area where I live, we have a food service called Ruby’s Pantry. You can read more about it here. If you receive Ruby’s Pantry shares, there is oftentimes breakfast sausage or bratwurst included in the share. I like to be creative with meat rather than just eat it for breakfast or in a bun. For a few shares, there was an abundance of frozen corn and black bean mixture. This is a creative way to use this mix.

INGREDIENTS FOR Ruby’s Scrumptious Sausage Jambalaya
Using a premade boxed Jambalaya mix makes this recipe so simple. I use the Aldi brand, but if you don’t have an Aldi, the Zatarain’s brand is delicious. Simply follow the package directions to prepare the Jambalaya.

Sausage or Bratwurst
As I mentioned, breakfast sausage or bratwurst are a regular item received in Ruby’s shares. Either one works great for this recipe. You could also use ground beef or shrimp if that’s what you have on hand. This recipe is very versatile.
Corn Black Bean Mix
As I mentioned earlier, there was an abundance of frozen corn black bean mixture in recent shares from Ruby’s Pantry. If you do not have the mixture on hand, you could substitute 2 cups of frozen corn and one can of drained black beans.
Ruby’s Sausage Jambalaya
- 1 package Jambalaya Mix
- 2 ½ Cups Water
- 1 tbsp olive oil
- 1 package corn and black bean mixture or 2 cups frozen corn and 1 can black beans
- 1 lb precooked breakfast sausage or bratwurst, chopped
- MIX 2 1/2 cups water, Rice Mix, meat of your choice, corn and bean mixture, and 1 tbsp. vegetable or olive oil (optional) in 3-quart saucepan until well blended. Bring to boil. Reduce heat to low. Cover.
- SIMMER 25 minutes or until rice is tender.
- REMOVE from heat. Let stand 5 minutes. Fluff with fork before serving.
