Farmhouse Creamy Eggs with Veggies Skillet is a hearty, healthy breakfast. It uses farm-fresh ingredients such as eggs, cream, and vegetables. This filling meal keeps you satisfied until noon. Not only that, it is frugal and fast to prepare. Your whole family will enjoy this recipe. Well, unless you have veggie hating children. But you can always leave the vegetables out!
As a Trim Healthy Mama, Farmhouse Creamy Eggs with Veggies Skillet is definitely one of my go-to breakfast meals. Breakfast is my favorite meal of the day. Mostly because I get to drink a lot of coffee with farm-fresh, raw cream. I wrote about my Trim Healthy Mama journey and 10 Veteran Tips. One of the tips I shared was to find meals you like and eat them often.

Farm Fresh Ingredients
I have a flock of about 30 chickens, 5 ducks, and several turkeys. They produce many eggs throughout the year. We also have a jersey cow who gives us fresh milk every day, and a big garden with a variety of veggies. Therefore, this breakfast is ultra-cheap for me. If you don’t count the cost of keeping the animals, it is free!
I love eggs. I could eat them three times a day. Prepared them any way possible, sunnyside up, over-easy, scrambled, hard-boiled. I will eat them. My husband, on the other hand, hates eggs. However, he knows eggs are good for him. So I doctor up his eggs so he actually likes them. Oftentimes, I leave the cream out when I prepare eggs for both of us. The recipe is equally delicious without the cream.
If you follow Trim Healthy Mama, this is an S or Satisfying recipe. Pair it with a large cup of coffee with more farm-fresh raw cream. If you follow a Keto, Low-Carb, or Code Red, this recipe is also acceptable. If you are not a coffee drinker, you might like Spiced Matcha Tea.
You can add additional veggies. In the summer, I usually add whatever vegetables are produced in the garden. Zucchini can be shredded and sauteed as a hashbrown type of dish. If you like mushrooms, that is another great choice.
Farmhouse Creamy Eggs and Veggies Skillet
- cooking spray
- 1/4 cup green, red, or yellow pepper chopped
- 1 small onion chopped
- 1 handful baby spinach fresh
- 1 tbsp heavy cream
- 2 eggs
- Spray skillet with cooking spray
- At medium heat, add peppers and onions, saute for 2 minutes
- Add baby spinach, saute for 1 more minute
- Add cream, allow to bubble for 1 minute
- Add eggs, (scramble, if desired), cover for two minutes.
- Remove from heat and enjoy!
