An Old-Fashioned Chocolate Zucchini cake
This cake recipe is tried and true. I first tasted this cake when my mother-in-law made it years ago. You can’t even taste the zucchini, but it was the moistest chocolate cake I had ever tasted. I have been making it ever since.
Ingredients and Substitutions
One nice thing about this recipe is that it uses ingredients that you probably already have on hand. That also makes it a very frugal recipe. This recipe begins with eggs, which if you have your own chickens, you have! You could also substitute duck eggs for an even lighter and fluffier cake!
If you have a cow you also have buttermilk. If you don’t have buttermilk, you can easily substitute regular milk. I have used both and I haven’t seen a difference in the recipe. You can also substitute butter or ghee for the coconut oil.

I have made this cake for church potlucks, birthday parties, and just as a nice dessert after dinner. Everyone always loves it, even kids! Just don’t tell them that there are vegetables inside.
The Frosting that Tops the Cake
I have also included an easy chocolate frosting. You probably have all these ingredients on hand as well, except maybe the marshmallow creme. If you don’t have that, I have substituted heavy cream and it is delicious.

Easy, Delicious Chocolate Zucchini CAke
Ingredients
- 3 Eggs
- 3/4 cup Sugar
- 1/2 cup Brown Sugar
- 1 tsp vanilla
- 1/2 cup coconut oil
- 2 cups flour sifted
- 1/3 cup cocoa
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk (regular milk is fine)
- 2 cup zucchini shredded
Instructions
- grease 9 x 13 pan with cooking spray
- preheat oven 350
- beat eggs until foamy
- add sugar and vanilla and beat until thick
- add oil, mix until combined
- Combine dry ingredients and add to egg mixture
- fold in zucchini
- pour evenly into prepared pan
- Bake at 350 degrees for 50-55 minutes

Easy Chocolate Frosting
Ingredients
- 3 Tbsp sugar
- 2 Tbsp Water
- 1/2 cup chocolate chips
- 1 Tbsp Marshmallow cream
Instructions
- Combine sugar and water and bring to a boil
- Remove from heat
- add in chocolate chips (they will melt)
- blend in marshmallow creme
- add water, if necessary, for right consistency
- Spread over cooled cake
